Mojito Muffins

That's no secret that I love desserts... any kind really. Cupcakes, muffins, pies, cookies, chocolat,... I'm such a big foodie, my mouth is watering as the same time I am typing this. To be perfectly honest, I currently have a muffin right beside my left hand... Well a muffin minus a bite!
Anyways, when I saw that one of my friends posted something about a MOJITO muffin recipe on her facebook page, I didn't even think twice and ran to the kitchen to make sure we had all the ingredients needed! And they are so goooooood!! We had friends over last night and I made them again, this time adding rum to the recipe and it tasted even better.
What you need for the muffins:
100gr sugar (I used Splenda and it tasted so good! And didn't have the calories so score!)
150gr flour
1 lime (you will need the juice and the zest)
8-10 mint leaves
1/2 tbp baking powder
1/2 tbp baking soda
50ml vegetable oil
125ml milk
1 egg
1tbp white rum (optional)
What you need for the icing:
100gr cream cheese
200gr butter
1 lime (again you will need the juice and the zest)
2 tbps mint leaves (cut tiny)
1 tbp white rum (optional)
350gr icing sugar
How to do the muffins:
1. Cut the mint leaves into tiny pieces. Grate the zest, and add it to the mint leaves. Add the sugar, and keep it aside for 10 minutes.
2. In a bowl, mix the dry ingredients (flour, baking powder, baking soda, and sugar)
3. In another bowl, mix the wet ingredients (egg, milk, oil, lemon juice, rum) and then add the dry ingredients.
4. Put in muffin tin and bake at 400F for 12 minutes.
5. Let cool down before adding the icing (or it will melt and get everywhere... speaking from experience)
How to do the icing:
Mix all the ingredients until you get a smooth and thick cream. Put in the fridge as I find it is easier to handle when cold and hard (not too hard though! Don't freeze it!)
